so, on this one really adventurous day i had while grocery shopping recently, i decided to purchase some natural hazelnut butter from the organic section just to see how it compared to the fabulous spread of sugary hazelnut heaven that is our beloved nutella. this was silly of me, but i was curious, and as it turned out, the natural kind was pretty good, but it obviously wasn’t nutella. it kind of reminded me of natural peanut butter. only hazelnut version. which is actually exactly what it was, i guess. and once my brain got that all sorted out, my next thought was to make cookies! hazelnut cookies! so i did! i basically made peanut butter cookies with hazelnut butter, and they were pretty delicious. it was fun to do something different, since i’m usually all about chocolate chip or sugar cookies, and they were a big hit with my family members, so i thought i’d share!
ingredients
- 1 cup hazelnut butter
- 1/3 cup brown sugar
- 1 cup white sugar
- 1 cup butter
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp vanilla extract
- 2 cups flour
directions
- preheat oven to 350°F
- mix together hazelnut butter, butter, and sugars
- add in eggs
- add baking powder, baking soda, vanilla
- add in flour [i added it in 1/2 a cup at a time and stopped when the consistency seemed right!]
- roll teaspoonfuls of dough into balls, then flatten them slightly on baking sheet
- sprinkle, no, pour some more sugar on the tops of the cookies!
- bake 6-10 minutes [we have a convection oven and it seems to bake things longer, so i think i did 10]
