i did something yummy. really yummy. i got back on my pumpkin kick! and i don’t regret it one bit. except maybe a little because i’ve been nibbling at these ridic iced pumpkin bars for days now.
they’re super sweet and yum and delish and were definitely a bit messy until i put them in the fridge. the fridge was a good idea. but then, to eat it, i heat it up in the microwave for about 10 seconds and it tastes a little like a cinnamon roll! so good. i don’t know why i do this to myself.
ingredients
-bars-
- 4 eggs
- 1 2/3 cups sugar
- 1 15-oz can pumpkin
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
-frosting-
- 1 package [8 oz] cream cheese, softened
- 1/2 cup [1 stick] butter, softened
- 3-4 cups confectioners sugar
- 1-2 tsp vanilla extract
directions
- preheat oven to 350
- mix eggs, sugar, oil and pumpkin til light and fluffy
- mix flour, baking powder, cinnamon, salt and baking soda in another bowl
- pour flour mixture into pumpkin mixture and stir til smooth
- pour batter into greased 9×13 baking dish
- bake 30 minutes
- while it’s baking, mix cream cheese and butter in a bowl til smooth. add in sugar and vanilla.
- ice once it’s cooled
- give some to your friends because you don’t need the whole thing sitting there waiting for you to eat it all
