is because it’s a good excuse to bake and make everything pumpkiny.
so, when i found this super tempting recipe for pumpkin muffins on smitten kitchen,
i had to bake some up and try them asap.

soft and sweet and perfectly pumpkiny.

here’s the recipe:
ingeredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 cup canned solid-pack pumpkin
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon pumpkin-pie spice
- 1 1/4 cups plus 1 tablespoon sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
directions
- preheat oven to 350°F. grease or put liners in muffin cups.
- mix pumpkin, oil, eggs, pumpkin pie spice, 1 1/4 cups sugar, baking soda, and salt in a large bowl until smooth, then stir in flour and baking soda.
- mix cinnamon and 1 tablespoon sugar in a small bowl.
- pour batter in muffin cups [each should be about 3/4ths full], then sprinkle tops with cinnamon-sugar mixture.
- bake 20 to 30 minutes, until toothpick inserted into center comes out clean.
- let muffins cool in pan.
- nibble nibble! autumny goodness.
