lately i’ve discovered a fondness for late night baking.
and banana bread is definitely one of my most favorite things to have around. comfort food major.

so, tonight i thought i’d have some ready for mr. prince charming steven the business man’s early thursday morning breakfast!
i know there are like, a fafillion different b-nanner bread recipes out there in the world..
but the one i use time and time again is from a wonderful cookbook that a very wise woman once gave me [my mom, of course]… the joy of cooking.

ohhh, i love it. goes like this:
ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup sugar
- 1/3 cup veg shortening or 3/4 stick of butter
- 3/4 tsp grated lemon zest [or lemon juice if you’re not into the whole grating thing]
- 1 to 2 large eggs, beaten
- 2 to 3 mashed bananas
directions
- preheat oven to 350 degrees & grease loaf pan
- whisk flour, baking powder, salt
- beat in a large bowl sugar, shortening/butter, lemon
- beat in eggs & bananas
- add in dry ingredients in 3 parts
- pour into pan & bake 1 hour
so mine came out successfully tonight, despite the fact that i accidentally used a whole stick of butter, combined all the ingredients in one bowl, and forgot to beat the eggs. but see, these are the kind of recipes i need in my life… fool-proof!

That picture has inspired me to give it another shot… I can usually bake with the best of them, but bananner bread is the one thing that always seems to elude me!
